Sweet Dishes of Kheer |
Kheer (Sweet Mixture of Milk & Rice)
Ingredients :
- Milk - ½ Litre
- Basmatic Rice - ½ Half bowl
- Nuts - Chopped
(Almond, Cashew nuts, Raisins, Desiccated Coconut)
- Sugar - as per tate

Method :
- Soak the rice in water for about 10 minutes. Boil milk thoroughly and add the rice to the boiling milk.
- Stir it occasionally till is concenerated and the rice is cooked the consistency should not be very thick. Add the chopped nuts (partially saving some for garnishing) and sugar.
- Transfer this in a bowl and garnish with remaining nuts and chill it during summer the season. But in winter, you can enjoy this kheer hot or the way you would like to eat.

Rice Phirni
Ingredients :
- Rice - ½ bowl
- Milk - ½ Litre
- Nuts Chopped - ½ Cup

Method :
- Soak the rice in water for about an hour and then grind it thoroughly. Add the milk to this and strain it through a sieve.
- Let this mixture boil till it obtains custard like consistency. Add sugar or honey as per your taste. Add the chopped Nuts inti it.
- Put the delicious sweet into a bowl and decorate it with powered green cardamom and remaining chopped Nuts. Serve it chill

Saffron Rice (Kesar Wala Rice)
Ingredients :
- Saffron - 1 tsp
- Almonds peeled - ½ Cup
- Desiccated coconut - 1 tbsp
- Sugar as per your taste
- Green Cardamom - ¼ tsp
- Basmati Rice - 1 cup
- Butter/ghee - 1 tbsp

Method :
- Soak saffron in a bowl of water for an hour. Soak the rice also.
- Noew roast the peeled almonds and desiccated coconut in butter or ghee. Add 2 cups of water to this along with saffron water, sugar or honey.
- When the water begins boiling add the rice into it and cook it properly. This rice would be of yellow colour, Decorate it with nuts.

Carrot Parantha
Ingredients :
- Carrots grated - ½ kg
- Wheat flour - 2 bowls
- Ajwain - ½ tsp
- Green chillies - 2 (finely chopped)
- Cumin seeds - ½ tsp
- Green corrinder - 1 tsp
- Onions - 1 tbsp (chopped finely)
- Ginger - ½ tbsp (chopped finely)
- Salt - according to taste

Method :
- Knead the carrots and all the ingredients together. Roll it out and cook it the same way as pea prantha.

Green Peas Parantha
Ingredients :
- Green Peas - 2 bowls
- Wheat flour - 2 bowls
- Ani seeds - 2 tsp
- Green corander - 2 chopped
- Green chillies - 2 chopped
- Onions - 1 tbsp (chopped finely)
- Ginger - ½ tbsp (chopped finely)
- Salt - according to taste

Method :
- Grind the peas, mix these and all the spices in the wheat flour and knead it till dough.
- Roll it out in round shape and add a bit of ghee in it. Fold its one end till the centre and then fold from the others and overlapping the first one. Fold it again from the ends overlapping again. Roll it out in the same square shape and cook it on low flame turning occasionally. You can even apply a bit of ghee on both sides.
- Serve it hot with pickle and curd or butter

Raddish Parantha
Ingredients :
- Raddish (grated) - 2
- Wheat flour - 2 bowls
- Ajwain - ½ tsp
- Cumin seeds - ½ tsp
- Spring Onions - 1 tsp
- Green chillies - 2 (chopped finely)
- Onions - 1 tbsp (chopped finely)
- Ginger - ½ tbsp (chopped finely)
- Salt - according to taste

Method :
- Sprinkle the half tsp of salt on the grated raddish and tie in thin cloth. After a few minute squeeze out the water and put it in the bowls and put all ingr. Thoroly. Now take small boll of kneaded wheat flour and roll it out a bit. Fill a ½ tsp of raddish mixture and make a ball of it again then roll it out till thin. Cook it on medium flame. If you wish you can apply ghee on both sides.
- Serve it with butter or yogurt and pickle.

Potato Parantha
Ingredients :
- Potatoes - boiled & mashed
- Wheat flour - 2 bowls knealed
- Ajwain - ½ tsp
- Coriander leaves - 1 tsp
- Cumin seeds - ½ tsp
- Spring Onions - 1 tsp
- Green chillies - 2 chopped finely
- Onions (Finely chopped)- 1
- Ginger (Chopped finely) - ½ tbsp
- Salt - according to taste

Method :
- Mix all the ingredients with mash potatoes. Now mix these mashed potatoes and wheat flour together and knead it into dough. Now take small boll and roll it out till thin. Cook it on medium flame. If you wish you can apply ghee on both sides.
- Serve it with butter or yogurt and pickle.

Ingredients :
- Cauliflower (grated) - 1 bowl
- Wheat flour - 2 bowls
- Ajwain - ½ tsp

- Onions (Finely chopped) - 1 tbsp
- Ginger (Chopped finely) - ½ tbsp

- Dal (soaked) - 1 bowl
- Gram flour - 2 or 3 tbsp
- Wheat flour - 2 bowls

- Spring Onions - 1 tsp
- Green chillies - 2 chopped finely
- Onions (Finely chopped) - 1 tbsp

Ingredients :
- Dal Mash (soaked) - 1 bowl
- Wheat flour - 2 bowls

- Green chillies - 2 chopped finely
- Onions (Finely chopped) - 1 tbsp

- Grind the dal. Take a work and roast the dal in ghee. Cool it and mix it with two bowls of each wheat flour together. Now add all the ingredients and mix well. Now knead it into dough. Take a small ball and roll it out in round shape, till thin.
- Cook it on medium flame. If you wish you can even apply a bit ghee on both sides.
- Serve it with yogurt or tomato sauce.

Ingredients :
- Moong Dal (Sprout) - 1 bowl
- Wheat flour - 2 bowls
- Ani seeds - ½ tsp

- Salt - according to taste

- Take sprouted moong and grind it coarsely. Add all the masalas in it and mix well. Now take a small ball of kneaded wheat flour and roll it out a bit. Fill a ½ tsp of sprouted moong dal's masala and make a ball of it again then roll it out till thin.
- Cook it on medium flame. If you wish you can even apply a bit ghee on both sides.
- Serve it with yogurt or tomato sauce.

Egg Fry
Ingredients :
- Eggs - 4
- Black Pepper - ½ tsp
- Desi Ghee - 2 tbsp
- Salt - according to taste

- Take a pan and heat two tbsp of ghee in it. Now put eggs yolk in it. Sprinkle some salt salt and ½ tsp of black pepper over it. Mix eggs properly with spoon.
- After that you can serve it with bread or chapaties to mother and baby.

- Cut boiled eggs in round pieces and paneer in small pieces. Sprinkle few drops of lime juice over it and all ingredients over the salad.

Egg with Keema
Ingredients :
- Keema - 250 gms
- Eggs - 6 (boiled)
- Onion large 1 chopped finely
- Ginger-garlic paste - 1 tbsp
- Green chilles - 2-3
- Turmeric - ¼ tsp

(big cardamom, cloves, cumin seeds, coriander seeds & cloves)
- Tomatoes (large) - 2 (chopped finely)

Method :
- Take a pressure cooker, put the ghee, keems and all the ingredients together. Cook it 2-3 whistles, open the cooker and start roasting the keema. When gravy thicken, then add boiled eggs and simmer it for a while. Garnish it with coriander leaves and serve hot.
Note - You can add green peas, paneer mushrooms white grams to the keema, cooking method will be the same.

Daliya
Ingredients :
- Daliya - 100 gms
- Dhesi ghee - 1 tbsp
- Nuts - 1 tbsp
- Sugar - According to taste
- Milk - 250 gms

Method :
- Heat about 1 tbsp of dhesi ghee in pan and add daliya of 100 gms in it. Fry it in ghee until it turns golden brown. Now add nuts and sugar into the daliya. After this add milk into it.
- Now put this mixture in a pressure cooker and cook it for one whistles.
- Daliya is very tasty and nutritious reciepe. This helps to increase the milk in mothers.

| Veg. Biryani |
Chaney Dal Biryani (Split Gram)
Ingredients :
- Dal (Split gram) - 1 bowl
- *Rice - 1 glass
- Onion - one (chopped finely)
- Garlic paste - 1 tbsp
- Ginger (chopped finely) - one tbsp (thin & long strips)
- Cumin seeds - 1 tbsp
- Coriander seeds - ½ tsp
- Big black cardamom - 3
- Red chilies - ¼ tsp
- Ghee - 1 big tbsp
- Salt as per taste
*Wash the rice thoroughly and soak it in water for some time.

Method :
- Wash and pressure cook the dal along with salt for three whistles or till it is almosy done. Take a pan and add ghee to it. And add the whole spices and ginger - garlic paste and chopped onions to it.Suate it till the oinions are pink. Add this to dal and then add the *rice. Add the water if required to cook the rice. Ensure that the water already in the dal is usfficient for the rice or not. Pressure cook it for one whistles. Open the cooker immediately.
- For a different taste you can add some raisins and other dry friuts along with the rice.

Paneer Biryani
Ingredients :
- Cottage Cheese - 250 gms (cubed)
- *Rice - 2 cups
- Onion - 2 big (chopped finely)
- Ginger-Garlic paste - 1 tbsp
- Cumin seeds - 1 tbsp
- Red chilles - ½ tsp
- Ghee - 1 big tbsp
- Cloves - 4
- Bay leaf - a leaf
- Black pepper - ½ tsp
- Salt as per taste

- Take a cooker and add desi ghee to it. Add the ginger-garlic paste and chopped onion and suate it till the onion turns golden. Put the cheese in it along with garam masala. Add two cups of water and the washed and soaked *rice. Pressure cook it for 1 whistles.
- Take out the steam and serve the biryani when hot.

Ingredients :
- Mixed vegetable - 250 gms (peas, carrot, beans, cauliflower)
- *Basmati Rice - 250 gms
- Ginger - 1 tbsp (chopped finely into long pieces)
- Garlic paste - 1 tbsp
- Cumin seeds - 1 tbsp
- Red chilles - ½ tsp
- Whole Black pepper - ½ tsp
- Dhesi Ghee - 2 tbsp
- Onion (chopped finely) - 1
- Cloves - 4
- Big leaf cardamom - 2 to 3
- Bay leaf - a leaf
- Salt as per taste
*Wash the rice thoroughly and soak it in water for some time.

Method :
- Take a pressure cooker and add dhesi ghee to it. Add the whole spices and then ginger - garlic paste and chopped oinions and saute it. Add the vegetables after the onion turns golden and stir fry these. Once the vegetables half cooked, add *rice and double the quantity of water in it. Pressure cook it for one whistle. OPen the cooker and serve it immediately.
- This biryani looks very nice with sauted vegetables of different colours.

Chicken Biryani
Ingredients :
- Chicken - ½ kg
- *Rice - ½ kg
- Cumin seeds - 1 tbsp
- Cloves - 3 tbsp
- Big Cardamom - 2 to 3
- Red chilles - ½ tsp
- Bay leaf - 3 leaves
- Whole black pepper - ½ tsp
- Lemom juice - 2 tbsp
- Onion (chopped finely) - 2
- Dhesi Ghee - 3 tbsp
- Ginger - garlic paste - 3 tbsp
- Salt as per taste
*Wash the rice thoroughly and soak it for some time.

Method :
- Heat Desi ghee in cooker, add Tej Patta and whole spices to it. As soon as cumin begins to crackle, add the ginger-garlic paste and finely chopped onion to it and saute it. Add the washed chicken and pressure-cook it for one whistle. Open the cooker immediately and roast the chicken till done thoroughly. Add the water and simmer it for a while.
- Drain the *rice, and add to it and pure the lemon juice in it. Pressure-cooks it for one whistles. Now open the lid immediately and serve it piping hot.
